Grilled Hawaiian Chicken Tin Foil Dinners

This recipe is for THE perfect sweet Hawaiian chicken especially during these hot summer months! 


What you’ll need: 

  • 3-4 Large Chicken Breasts
  • 2 Tablespoons Gluten-Free Soy Sauce
  • 1 Cup Gluten-Free BBQ sauce
  • 1 Large Can of Sliced Pineapple
  • 1 Red Bell Pepper
  • 1 Yellow Onion
  • Fresh Green Onions 
  • 3 Cloves Fresh Garlic
  • Tin Foil

Preheat your grill to a medium setting. Slice red bell pepper, and onions into bite size pieces. 

Mix BBQ sauce, soy sauce, and pineapple juice from the can of pineapple together to create a sauce. Add pineapple juice little bits at a time until the taste and consistency is pleasing to you. Mix in fresh garlic cloves, minced. 

Tear off individual pieces of tin foil and place a chicken breast on each piece. Cover the chicken with a generous amount of sauce, and divide up the onions and bell peppers evenly. Add two slices of pineapple to each as well. (Set aside extra sauce for when the chicken is done cooking) Wrap em’ up nice and tight! Place on the grill, flip frequently. These took about 30-35 minutes to be cooked thoroughly. 

***The sauce is fairly thin, double wrapping the tin foil is a good idea and be cautious when flipping them!***

Top with fresh green onions, extra sauce if desired, and serve with rice. Enjoy!
